I took a course as an undergrad called Plants & People. It was one of those dreaded core classes that was left for freshman and sophomores to take because you were closed out of every class that you really needed. To my surprise the class was both fun & interesting. I can clearly remember my professor going off on crazy tangents about how quinoa was going to take over the world. In 2008 I struggled to pronounce quinoa correctly… six years later, this superfood has become a staple in my diet. Quinoa is packed with all 9 essential amino acids, it’s loaded with protein, and it is absolutely delicious. On Sunday I decided to play chef and created some very tasty quinoa patties. If you haven’t tried them your missing out (even my meat loving boyfriend loved them)!
What You’ll Need
1 Cup Water
1/2 Cup Quinoa
1/4 Cup Shredded Cheese (We chose part skim Mozzerella)
1/4 Cup Breadcrumbs (We mixed Italian Style with Panko)
1 small onion, diced
5 Broccoli florets, diced (You can add a veggie of your choice!)
Salt & Pepper (to taste)
Step 1: Boil 1 cup of water. Add in 1/2 cup of quinoa and reduce boil to a simmer (for about 12-15 min).
Time to multitask! Steps 2-4 can be done all while the quinoa is simmering.
Step 2: As quinoa is cooking dice up onion and saute on medium to low heat. Then let cool.
Step 3: Steam broccoli until lightly cooked (about 5 or so min). Let broccoli florets cool and then dice them.
Step 4: Shred 1/4 cup cheese
Step 5: Once quinoa is cooked and cooled mix in onion, broccoli, breadcrumbs, cheese, salt & pepper, and the egg!
Step 6: Heat oil in a large non stick pan over medium to low heat. I used my measuring cup as a mold for the patties. Once in the pan gently press down with the bottom of the measuring cup to help flatten out the shape.
Step 7: Let patties cook for 6-8 min on each side (or until you notice them turn a light crispy brown).
