Admittedly, my repertoire of recipes is really small. I like to cook, however working well into the evening on most days, and having opposite schedules of my beau, I tend to cook the same monotonous meals, time and tim again. Lately, I’ve been on the lookout for quick and simple recipes that I could use to spice up my collection. This spicy shrimp pasta, that I found conveniently on Pinterst, did just the trick. Check it out below!
What you will need:
- 1 lb raw, peeled & deveined shrimp
- 1/3 cup olive oil
- 1/4 cup parmesan
- 4 cloves garlic, minced
- 2 teaspoons soy sauce
- 2 teaspoons brown sugar
- 1/2 teaspoon red pepper flakes
- 2 cups whole wheat pasta
- 12 spears of asparagus

Step 1: Mix olive oil, parmesan, brown sugar, soy sauce, garlic & red pepper flakes together.

Step 2: Add uncooked shrimp to a ziplock bag and pour marinade over the top. Once sealed, do a little dance and shake the bag, so that the marinade is completely covering the shrimp.
Step 3: Place the bag of shrimp in your refrigerator and let marinade sit for 30 minutes. Or for a few hours if you prefer.

Step 4: When ready, cook whole wheat pasta according to directions (usually 15-20 min). At the same time, steam the spears of asparagus.
Step 5: While pasta & asparagus are cooking, heat up a medium to large skillet. Add shrimp & marinade to the skillet and cook until the shrimp are pink (2-5 minutes).

Step 6: Turn off the heat and add in the asparagus. Once pasta is done cooking, mix all ingredients together in a big bowl.
Step 7: Enjoy!

Cheers,
