Breakfast is, by far, my favorite meal of the day. But, I also seemingly prefer an extra 15 minutes of sleep every morning, over spending that time on crafting my breakfast. So, unfortunately, I don’t really get to fully enjoy the wonderous meal that is breakfast until the weekend rolls around. During the week, I love blending up my quick and easy smoothies. Once the weekend hits, I step my smoothie game up to another level: smoothie bowls. It’s basically like eating ice cream but healthier. And, oh are they delicious. Plus, eating a smoothie with a spoon is so much more fun than drinking it out of a glass.
The toppings are what make this meal a bit more hardy than usual. It’s another delicious way to add fresh fruits and veggies, along with superfoods to your diet. Here’s one of my favorite smoothie bowl recipes below…
- 3/4 cup coconut water
- 1 cup spinach
- 1 frozen banana
- 1/2 cup frozen pineapple
- 1/4 avocado
- 1 teaspoon lime juice
- 2 tablespoons vanilla Greek yogurt
- 2 ice cubes
- large flake coconut chips
- chia seeds
- hemp hearts
- lime zest
- sliced fresh fruit (bananas, strawberries, blueberries, kiwi)
Step 1: Throw all the ingredients into your blender.
Step 2: Add toppings of choice.
Step 3: Enjoy immediately!
